Endive

Also known as endive, chicory is a cultivated crop grown in complete darkness, resulting in its blanched white leaves with yellow or red tips. The plant has a distinctive, cigar-like shape, typically about 12 cm long, and features crisp leaves with a mildly bitter flavour. Chicory is versatile in the kitchen, adding a unique taste to salads when raw, or serving as a delicious cooked vegetable, whether roasted, grilled, or sautéed.
