Lampuki

Lampuki is the Maltese name for the dorado or mahi-mahi, a kind of fish that migrates past the Maltese islands during the Autumn. Maltese fishermen have devised an ingenious way of catching lampuki, when the fish swim near the surface they seek refuge from the sunshine. The fishermen create shade by using palm leaves, the fish bask in the shade and the fishermen cast their nets.

Lampuki flesh is soft and oily, similar in some ways to sardines and mackerel.
