A Taste of Greece: Psari Plaki

Ever fancied a Greek holiday without leaving your kitchen? Psari Plaki might just be the fastest route there. A savoury, oven-baked fish recipe that impresses with every bite, and won’t have you smashing plates out of frustration (unless you want to!). And here’s a cheeky suggestion—add some crumbled feta or olive oil-breadcrumbs on top for that extra wow factor!

Ingredients

800 grams white fish fillets (e.g, Bream or Bass)
2 large onions, sliced
4 cloves garlic, minced
1 (400 grams/14 ounces) tin chopped tomatoes
1 bunch fresh parsley, chopped
100 millilitres (3.5 fl oz/½ cup) olive oil
1 lemon, sliced
to taste Salt and black pepper
Optional: 100 grams (3.5 ounces) crumbled feta or olive oil-breadcrumbs

method of cooking

1 Preheat your oven to 180°C (350°F or Gas Mark 4). While that's warming up, grab a large skillet or pan and heat half of the olive oil over medium heat.
2 Toss in the sliced onions and minced garlic, and let them sweat it out until soft and translucent. Performed by the ol' stirring routine for around 5-7 minutes.
3 Throw in the chopped tomatoes along with a generous pinch of salt and a good crack of black pepper. Let this saucy mixture simmer for about 10 minutes.
4 Now place your white fish fillets into a baking dish and cover with the tomato mixture. Pour the rest of the olive oil on top and sprinkle with the chopped parsley.
5 Top with lemon slices for that authentically Greek zesty finish. Loving the sound of feta or crispy breadcrumbs? Scatter them generously over the top.
6 Pop the whole creation into the preheated oven and bake for 35-40 minutes, or until the fish flakes easily with a fork. Let rest for a few minute, then dig in!
