200 grams dark chocolate
200 grams unsalted butter
250 grams caster sugar
100 grams light brown sugar

1 Preheat your oven to 180°C (350°F or Gas Mark 4) and line a baking tin with parchment paper.
2 Melt 200 grams of dark chocolate and 200 grams of unsalted butter together in a heatproof bowl over simmering water (or in short bursts in the microwave). Stir until smooth and set aside to cool slightly.
3 In a large bowl, combine 250 grams of caster sugar and 100 grams of light brown sugar. Add 3 large eggs one at a time, beating well after each addition.
4 Slowly pour the melted chocolate mixture into the sugar and eggs mixture, stirring constantly until fully incorporated.
5 Sift 100 grams of plain flour and 50 grams of cocoa powder into the bowl and fold gently until just combined.
6 Fold in 100 grams of dark chocolate chips and 100 grams of chopped walnuts.
7 Pour the batter into the prepared baking tin, spreading it out evenly.
8 Bake in the preheated oven for 25-30 minutes or until a skewer inserted into the centre comes out mostly clean, with a few moist crumbs attached.
9 Allow the brownies to cool completely in the tin before lifting them out and cutting them into squares. Enjoy!
