250 grams | caster sugar |
100 grams | light brown sugar |

1 | Preheat your oven to 180°C (350°F or Gas Mark 4) and line a baking tin with parchment paper. |
2 | Melt 200 grams of dark chocolate and 200 grams of unsalted butter together in a heatproof bowl over simmering water (or in short bursts in the microwave). Stir until smooth and set aside to cool slightly. |
3 | In a large bowl, combine 250 grams of caster sugar and 100 grams of light brown sugar. Add 3 large eggs one at a time, beating well after each addition. |
4 | Slowly pour the melted chocolate mixture into the sugar and eggs mixture, stirring constantly until fully incorporated. |
5 | Sift 100 grams of plain flour and 50 grams of cocoa powder into the bowl and fold gently until just combined. |
6 | Fold in 100 grams of dark chocolate chips and 100 grams of chopped walnuts. |
7 | Pour the batter into the prepared baking tin, spreading it out evenly. |
8 | Bake in the preheated oven for 25-30 minutes or until a skewer inserted into the centre comes out mostly clean, with a few moist crumbs attached. |
9 | Allow the brownies to cool completely in the tin before lifting them out and cutting them into squares. Enjoy! |
