Vin Cotto is made by slow cooking and reduction of Non-fermented grape ‘must’ over many hours, it is a common ingredient around the Mediterranean but has many names and is produced from many fruit sources, In Turkey its called Pekmez and is derived from grapes but sometimes plums or other fruits.

Here in Malta Carob Molasses is often produced which is similar in many ways to Pekmez and Molasses.
